Corn Salad

Attending family reunions often involve bringing food for a pot luck lunch. For this year's reunion I was looking forward to using produce from our garden. I was inspired by an Instagram account that posted earlier this summer about a corn salad that she loves. She did not include specific measurements or directions so I was immediately drawn to the simplicity of her cooking and her encouragement to go for taste. Well I went for it and may have found my new go-to summer salad. 

Corn Salad

  • 6 cobs of corn, husked
  • 3 Tbsp butter
  • Minced garlic
  • Salt and pepper
  • Basil
  • Oregano  
  • Thyme
  • Feta cheese
  • Juice of one lime  

Cut corn away from the uncooked cobs and sauté in skillet with butter and garlic for about 7 minutes. Season with salt and pepper and add finely chop herbs. Add feta and lime juice, toss, and voila! 

Sweet summertime deliciousness.
