There are some desserts I love year round even if they are considered seasonal. To me, pumpkin bars taste just as good in April as they do in November. Rhubarb desserts on the other hand, I am happy to get my fill in early summer and be content for the year. Well this year I was afraid I was not going to be able to get my fix since I was having trouble finding rhubarb.
Rhubarb is not something we see in our local grocery store. And without a rhubarb plant in our backyard, I had to go a step further to ask around if anyone had extra to give away. Well, I was too lazy this year and did not go that extra step and thought my rhubarb chances slipped away. That was until I went to our local farmer's market! For $1.50 I was in luck with a bag of rhubarb.
What to do with it, was my next question. Year after year I make rhubarb crisp or strawberry-rhubarb bars but I was in the mood for something different. I asked a friend at a play date what she does with hers and she mentioned how she tried a new recipe and loved how it turned out! I had to give this new recipe a try. Well I don't think I should consider it a brand new recipe in the world, but it was new to me.
Rhubarb Dream Bars. They were a hit in our house and I am sure they will be a hit in yours too. If you are a fan of lemon bars, then this is the perfect variation for you.
